I noticed that secure boot doesn't show any more which might mean its enabled.
But I think this may be part of my problems.

Check in the BIOS to see if secure boot is enabled. IF it is disable it.

Did everything with Rufus go right?

The text installer should be available:-
You can try typing start installer-text.sh and see if it works. If it doesn't work maybe a error message will help.

OK-

Do you any other options like 'graphical install' or 'safe mode' before the stick boots to that screen in the screenshot?

Safe mode is around on Legacy mode, booted that and I get a black screen with a moveable cursor.

Roger that:-

Try typing "start installer-text.sh" at that prompt and see if it works. If it doesn't work do you get an error message?

Have you tried installing in UEFI Mode?

I have tried installing on UEFI as well as legacy, not much luck.

This is what comes from the UEFI menu and if I hit edit on install.

I'm afraid I'm close to running out of ideas of what you could try.

The only other thing that I can think of is to download the mimimum .iso without the DE. Than install a DE later.

The installer might have a bug and I'm suspicious that may be the case.

Remember I tried to install Sabayon twice in VBox and the installer stuck at the end and I couldn't finish the configuration.

Where Advanced Options of any help in UEFI Mode?

Did you try adding nomodeset to the end of the kernel line in Legacy Mode?

So I got Sabayon 18.05 KDE and ran safe mode and it worked!

Well when you are ready close the "Welcome to Sabayon" window and click on 'Install to hard drive"

Thanks, might install it over the SSD an auto configure partitions.
I have to figure out how to delete the spaces and expand onto my space.
