Now, if i emerge something as root not using the live-cd will it do it properly? I mean cos none of the directories work when im logged in as root NOT using the live-cd
#dir
and nothing shows up...
cd mnt
no such file or directory
Does the drive have to be mounted to do it?
everytime before i reboot with the live-cd i do this:
#exit
(to get out of the chroot)
#umount /mnt/gentoo
#reboot
Now, if i emerge something as root not using the live-cd will it do it properly?
Yes, when you reboot into your new system you should be able to install programs and run the system without the livecd.

why doesnt it work like this ?
Dir (why don't you use 'ls' by the way?) doesn't show anything because the directory your in (probably /root?) is empty. 'cd mnt' doesn't work because its trying to find 'mnt' relative to the directory you are in, since a directory called 'mnt' is not in the directory you're in you won't be able to get there. Try "cd /mnt" to get to the mount directory you're looking for.
When you were using the live cd, you were chroot'd into the root (/) directory of your new system which was mounted from the cd. Now that you've rebooted you no longer need to chroot in because you've gone directly into the new install.
The gentoo directory was a temporary directory you used to mount the the root (/) directory on, if you do "cd /" you'll find that you're already in what was formerly the /mnt/gentoo directory.
Hope I'm being clear here
