Server 10.10 as desktop testbox

Considering to use Ubuntu 10.10 as my test box for various Linux projects. Initially I thought about using desktop, but since I use some server tools as well (Apache, MySQL, php, etc) I thought I might install 10.10 server and install the Gnome desktop on it. What are then the major differences to using 10.10 desktop and install the server components this, if any?

When I've started with the minimal install and then added a graphical desktop environment, my system still boots into text mode. Other than that, I haven't noticed any differences I conside r significant

Tested an install on a virtual 10.10 Server box last night with
Code:
apt-get install ubuntu-desktop
waited for some time, rebooted and came up into the GUI.

To avoid messing up my system what I have is a headless 10.04 server and minimal Xorg so I can use from time to time the GUI part of Virtualbox. Then I have a mail server and an XP machine running as virtual guests inside the server. And when ever I need to test other distros they go as virtual machines also.
