when I run e2label on /dev/hda1 which is my boot partition, it reports as /boot1 not /boot. any ideas why it appending the 1 onto the end?

Nope, does it really matter??? If you really want it to be /boot then set it using e2label (as root of course). Do not forget to edit the /etc/fstab file to reflect this change.
