Is it possible to list all databases that MYSQL is currently managing from the mysql command line? If so, what's the command?

show databases;

Also, the shell command "mysqlshow" will work.

Look in /usr/share/doc/packages/mysql/ for a manual.pdf or manual.ps file. It is a 1960 page manual. If you haven't done so yet be sure to read "2.9.3. Securing the Initial MySQL Accounts".
