I agree with trying to do things 'straight' in Wine over Lutris - there's a lot of good ideas contained in Lutris runners/scripts, that are often not updated or maintained for newer distros, libraries, application updates, etc after they cease to release to something popular. Still, a good resource to pick through to potentially see what dependencies, configuration flags, etc may help end-run some problems.
That having been said, Origin is generally a mess on linux, even with Wine, Lutris, etc, and it can fully break from update to update, as EA tends to have zero concern for non-Windows platforms. See WineHQ for some more information:

Note that Origin is only ever available as the 'latest' build, so this situation is dynamic, and also note in the current review: the reporting user was unable to install any software from within Origin, only to get the client itself to run, so that is (in and of itself) not all that useful. You may try reading some of the older results for ideas, but remember that they will reference unavailable versions of the Origin software so whether or not those ideas help today is unknown.
To your logs: all of those errors reference gstreamer, which is a media framework - do you have it installed (or the specific plugins that it references, I should say)? At least parts of it should be default in Ubuntu, but you may need to add some additional plugins to meet the requirements of a given application (and yes, its entirely possible this is the only blocking issue with what you're trying to do, at least to get Origin itself running - games within are another chapter).
You can check on gstreamer plugins in Ubuntu in the Software Store - just search for 'GStreamer Multimedia Codecs' - usually to handle Windows applications or games you'll need/want the good, bad, and ugly sets installed.

Finally, I'm doubtful your actual end goal is to run Origin (and this entire discussion is therefore a form of an XY Problem (
https://en.wikipedia.org/wiki/XY_problem)), but instead to run a given game or games - my advice would be twofold there (with both sharing the same goal of getting out of the XY):
1) See if the game is available without Origin (yes this will mean 're-buying' the game - welcome to the age of DRM), ideally from a more linux-friendly platform like GOG or Steam
2) Do some research as to whether or not the game itself even has a chance to work on linux, either on WineHQ (linked above), ProtonDB (
https://www.protondb.com/), or the CrossOver database (
https://www.codeweavers.com/compatibility/) ('whats the difference between these three?' - they draw information from different userbases mainly - Proton is Steam's built-in Wine package, and CodeWeavers/CrossOver is a commercial implementation of Wine (and they're also a major contributor to Wine and Proton), so it's all inter-related under the hood and can give you some sense of what may or may not work).
