Look in
/etc/inittab for something like this:

Change the line
id:5:initdefault: to
id:3:initdefault: and you should get your text-mode login on bootup. To change logins immediately use the
init command. For example
init 3 will go to text mode and
init 5 will go to graphical login mode.
init 0 will shutdown the system while
init 6 will reboot the system.
EDIT: Oh, and I forgot to mention, you have to do this as root.
