Why not just a Chromebook? Those are locked down pretty tightly as is, and I wouldn't be surprised if Google's OS is based on some version of Linux or another.

the kernel, yes. "some" version (tainted by blobs).
no GNU though.

Ubuntu seems as simple as you get. It's a "batteries included" distro.
