apt-get with RHEL server park

Hi all,
I need to upgrade a Linux park with arround 200 RHEL 3 redhat servers.
I have a local repository inhouse (satelite used and updated via RHN).
All look easy as our apt package has been configured on all our servers to point to this repository (up to date thanks to RHN). So, all I need to do is apt-get update & apt-get upgrade on each servers !.
However, I am wondering how i can fall-back to original situation if after the update I found a big problem on one of the updated Server !!!.
As far as I understood, the apt-remove command is not really helpfull to me in this case because it will not restore the previous package version that has been replaced by apt-get upgrade !.
How to handle this problem ?

thanks for your advices...

IIRC what you're looking for is "rollback capability", maybe check out Transactions and Rollback with RPM and what your admin / distro docs say about rollback.
