I had already tried this path, but hadn't paid attention to what gvfs actually is (gnome virtual file system).
The gvfs-backends package is called gvfs in the Fedora repositories, and that package is bundled with Fedora 24.
However, for MTP support I needed to install the package gvfs-mtp, which can be done via yum extender or terminal:

sudo dnf install gvfs-mtp
Having installed that, no reboot was required, plugging in my phone resulted in it being visible in File Explorer (it was mounted at mtp://[usb:002,018]/).
This should work for anyone with an Android / Google mobile device (Samsung, Sony, Motorola etc) wanting to connect/automount using USB (MTP), hopefully I've included enough useful keywords here that this will show up in search results
